Ingredients:

  • 1 lb morel mushrooms, cleaned and chopped

  • 1 lb pulled pork

  • 1 lb elbow macaroni

  • 4 cups heavy cream

  • 4 cups shredded cheddar cheese

  • 2 cups shredded mozzarella cheese

  • 1/4 cup all-purpose flour

  • 1 tbsp olive oil, or for enhanced flavor, white truffle oil.

  • 2 cloves of garlic, minced

  • 1 tsp smoked paprika

  • Salt and pepper, to taste


Morel Mushroom Pulled Pork Mac & Cheese

Instructions:

  1. Preheat the oven to 375°F.

  2. In a large pot of salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.

  3. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for 1 minute.

  4. Add the chopped morel mushrooms and sauté for 5-7 minutes, until they are tender.

  5. Stir in the pulled pork and smoked paprika, and cook until the pork is heated through.

  6. In a separate pot, whisk together the heavy cream and flour over medium heat. Bring the mixture to a boil and then reduce the heat to low.

  7. Gradually stir in the shredded cheddar and mozzarella cheese until the sauce is smooth and creamy.

  8. Add the cooked macaroni and the pork and mushroom mixture to the cheese sauce, and stir until well combined.

  9. Transfer the mixture to a baking dish and bake in the preheated oven for 15-20 minutes, or until the top is golden brown and bubbly.

  10. Serve hot and garnish with fresh chopped parsley.
