Spicy Morel Mushroom Quesadillas

The kids love it, and the recipe is super quick and relatively cheap when we already have fresh morels. In our house, we have 'Quesadilla Mondays', which features this recipe only! - Trevor S, Trout Creek, MT

The first thought upon finding or buying morels is "how should I prepare this?". Typically, people settle on preparing a robust dinner, using the Morels as the star of the dish or a tasty supplement. This Chili-Fried Morel Recipe is a great example. However, uses of the delicious morel mushroom have only begun to be explored. Lately, a trend that involves incorporating morels into Mexican foods has taken off, expanding the culinary horizons of this mushroom. While it isn't a traditional Mexican food, the Spicy Morel Mushroom Quesadilla should satisfy any tongue looking for some cultural zest. The best part? Its extraordinarily quick to make, just like your favorite Mexican street-food or lunch-time snacks!


The Recipe: Spicy Morel Mushroom Quesadillas :

Cooking Time = 15 Minutes


Morel Avocado Toast

Ingredients

  • 1 tablespoon vegetable oil (or preferred oil)

  • 3 cups fresh or reconstituted morel mushrooms, diced

  • Salt, black pepper, chili powder (quantity up to you)

  • 8 flour tortillas

  • 7 oz smoked cheddar or monterey-jack cheese, thickly grated

  • 1 Avocado For Topping

  • Packaged Pico De Gallo or Salsa For Topping


Instructions

1. Heat 1 tablespoon of vegetable oil in a large frying pan. Add the diced mushrooms and cook for 7-10 minutes, until golden brown. Add spices in whatever amount you prefer. We recommend light salt and moderate ground peppers.

2. Heat a pan over medium heat. Heat 2 tortillas. Once slightly charred, flip and cover with a thin layer of cheese, 1/4 of the mushroom filling, and another top layer of cheese. Cover with another tortilla.

3. Let cook for 2-4 minutes. Once the bottom tortilla is golden brown, flip it on the other side.

4. One quesadilla is done. Repeat this process to make the remaining 3 quesadillas.

5. Peel an avocado, add to a bowl with a pinch of chili powder and mash it up until it is relatively smooth in consistency.

6. Serve hot, cut in fourths, with avocado and salsa on the side or on top for added flavor and texture.
