The first thought upon finding or buying morels is "how should I prepare this?". Typically, people settle on preparing a robust dinner, using the Morels as the star of the dish or a tasty supplement. This Chili-Fried Morel Recipe is a great example of that. Morels for dinner are unbelievably good, but where is the love for the most important meal of the day!?


Breakfast is a fantastic time to use morels and the anticipation of them can make waking up for the day much easier. Sure, you can make omelets or scrambled eggs with Morels, but we felt as if this special mushroom deserves a fancier platform for breakfast; Avocado Toast. Let's show you what we mean!


The Recipe: Morel Mushroom Avocado Toast :

Cooking Time = 15 Minutes



Morel Avocado Toast

Ingredients

  • ½ small avocado

  • ½ teaspoon fresh lemon juice

  • â…› teaspoon Kosher salt

  • â…› teaspoon freshly ground black pepper

  • 1 slice whole grain bread OR 1 half of a Bialy (Both must be toasted)

  • ½ teaspoon extra-virgin olive oil (for topping)

  • ½ teaspoon extra-virgin olive oil (To Cook Morels)

  • Toppings: Sea salt, red chili flakes.

  • 3 Large Morels (Black Preferred)


Instructions

1. In a bowl, combine avocado, lemon juice, salt, and pepper. Mash together with the back of a fork or spoon. Put aside when done. 2. Clean Fresh Morels or reconstituted Dried Morels (Tip: If reconstituting, you need to allow for about 30 mins of soaking prior to cooking)

3. Once opened up, dice the morels, but not too finely. Or, you can keep them whole if you'd prefer

4. Place the Morels in a pan with olive oil medium to high heat.

5. Cook the morels until the are golden brown on both sides.

6. Remove the morels from the pan onto a paper towel to absorb extra oil and sprinkle on a pinch of sea salt. Once slightly cooled, add them to the mash.

7. Top toasted bread with mashed avocado & morel mixture. Drizzle with olive oil or truffle oil and add extra sea salt and chili flakes.

8. Enjoy your nutritional, delicious breakfast!
